Outstanding book but dated:

A wonderful book for a someone wanting to really understand nutrition. It's a college textbook. So, it's highly technical including detailed discussions of chemical reactions and biological reactions.

If you want a very complete, academic book on nutrition this is the book. However, it's becoming dated. This 4th edition came out in 1993. There has obviously been some advances in the area of nutrition in the last ten years.
